Description

Overnight oats are a quick and easy healthy breakfast to meal prep for the morning. This recipe tastes like apple pie in a jar, including soft and sweet granny smith apple and warming cinnamon. 


Ingredients

  • 1/2 small granny smith apple, diced 
  • 1 tablespoon maple syrup 
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup old-fashioned rolled oats
  • 3/4 cup non-dairy milk (I used unsweetened almond milk) 
  • 1/2 tablespoon chia seeds or ground flax seeds (optional)

Instructions

  1. Heat up a little coconut oil or splash of water in a small pan over medium heat. Once hot, add the diced granny smith apple and sauté for 2 minutes. Pour maple syrup and cinnamon over the apples, and cook another 2 minutes, stirring frequently. Once apples have softened, remove from heat and let cool for a few minutes. 
  2. Add the oats, milk, and seeds to a jar or small lidded container. Stir until well incorporated. 
  3. Once the apples are cool enough that they are no longer steaming, add them to the jar. 
  4. Pop a lid on the jar and place in the fridge for at least 5-6 hours, or overnight.
  5. Enjoy! These overnight oats will keep in the fridge for 6-7 days.
