What is a mug cake?
Mug cakes are desserts (usually cakes 🍰) that are cooked in the microwave inside of a mug. These quick cakes are amazing because of their instant gratification – being able to whip up a delicious homemade dessert in just a couple of minutes is truly mind boggling.
Mug cakes are the perfect dessert for you if…
- You do not own an oven. Mug cakes are made in the microwave. If you have a microwave-safe ceramic mug and a microwave, then you can make a mug cake.
- You are lazy in the kitchen. Mug cakes usually require minimal ingredients, preparation, and cooking time.
- You want dessert for one. Most baking recipes yield large batches – after all, if you’re going to take the time to properly bake something, you might as well make it worth your time. But mug cakes are great single-serve desserts that are easy to make and are done in a flash.
A mug cake cinnamon bun for one (or two)
Mug cake has the word “cake” in it, but you can make a cinnamon roll in a mug too! All you need for this cinnamon roll mug cake recipe is flour, maple syrup, almond butter, non-dairy milk, banana, cinnamon, and baking powder. It is warm, soft, and very simple to make.
How to make a vegan cinnamon roll in the microwave
- Make the cinnamon roll dough by whisking together wet and dry ingredients in a bowl.
- Make the cinnamon glaze by mixing maple syrup, almond butter, and cinnamon.
- Press the cinnamon roll dough into a long thin rectangle.
- Spread the cinnamon glaze onto the dough, then roll the dough lengthwise to form a cinnamon roll.
- Place the roll in a greased mug and microwave.
Enjoy straight away!
This recipe yields one big cinnamon roll, but feel free to cut it in half to share it with a friend! Or make multiple cinnamon rolls for everyone 🙃
A few notes
- All microwaves are different. If your cinnamon roll is a bit underdone, just microwave it a bit longer. After you make a mug cake once or twice, you’ll start to understand how your particular microwave cooks.
- The cinnamon roll will not brown in the microwave. You’ll know the cinnamon roll is done when the dough has firmed up a bit and is no longer gooey.
- Eat the cinnamon roll mug cake straight away. The cinnamon roll will be softest when it comes out of the microwave, but will become harder the longer it sits. It is best enjoyed fresh.

Ingredients
Cinnamon Roll Dough
- 5–6 tablespoons all-purpose flour (plus more for dusting)
- 1/4 banana, mashed
- 1 tablespoon non-dairy milk (I used almond milk)
- 1/2 tablespoon maple syrup
- 1/2 tablespoon almond butter
- 1/4 teaspoon baking powder
- Pinch of salt
Cinnamon Glaze
- 2 teaspoons maple syrup
- 1 teaspoon almond butter
- 1/2 teaspoon cinnamon
Instructions
- Make the cinnamon roll dough. In a mixing bowl, mash the banana with a fork until smooth. Whisk in the non-dairy milk, maple syrup, almond butter, baking powder, and salt. Then stir in the 5 tablespoons of flour until well incorporated. The dough will be a bit sticky, but if it is too sticky to work with, stir in additional flour 1/2 tablespoon at a time.
- Make the cinnamon glaze. In a small bowl, whisk together maple syrup, almond butter, and cinnamon. *
- Assemble the cinnamon roll. Dust your surface with flour and press the dough into a long flat rectangle that is roughly 1/4 in thin. Spread the cinnamon glaze evenly on the dough. Roll the dough lengthwise to form a cinnamon roll.
- Microwave the cinnamon roll. Lightly grease the inside of a microwave safe mug. Place the cinnamon roll into the mug, pressing it down with your fingers if needed to make it wider. Microwave for 35-45 seconds (this will depending on the strength of your microwave) until fully cooked.
- Enjoy! Eat the cinnamon roll directly out of the mug, or take it out and enjoy on a plate. I cut my mug cake cinnamon roll in half to make two smaller cinnamon rolls (and ended up eating both of them myself).
Notes
* Double the measurements if you want some extra cinnamon glaze for the top of your cinnamon rolls!
