Mediterranean Chickpea Salad

This Chickpea Salad is loaded with Mediterranean flavors, comes together in under 10 minutes, and is perfect for meal prep.


  • 1 (15 oz) can of Chickpeas 
  • 1 medium Tomato, diced
  • 1 large English Cucumber, diced  
  • 1/2 Red Onion, diced
  • Juice of 1 small Lemon (~3 tbsp
  • 1 tbsp Olive Oil
  • 1 tbsp Apple Cider Vinegar
  • 1/2 tbsp dried Parsley
  • 1 tsp Garlic Powder
  • 1 tsp Oregano
  • 1/2 tsp Cinnamon
  • Salt + Pepper to taste


  1. Drain and rinse your Chickpeas very well. Put them into a large mixing bowl, along with the diced cucumber, tomato, and red onion. Give it a mix. 
  2. Stir in the remaining ingredients. 
  3. Put the salad in the fridge for at least an hour to let the flavors settle — the longer the better! I recommend overnight.
  4. Serve as desired.
