This Chickpea Salad is loaded with Mediterranean flavors, comes together in under 10 minutes, and is perfect for meal prep.
This salad became my best friend my second year of college. I was out of the dorms, living in an apartment with a full sized fridge (my current apartment has a mini fridge though… sigh), and no longer relied on the campus dining hall for my meals. I was interested in healthy eating and meal prepping, and wanted some simple meals to take to class during the week. This is how the Mediterranean Chickpea Salad was born.
Not a lot of serious meal prep goes on around here anymore (again, mini fridge!!!), but I still regularly make this recipe for the work week. Eat this salad on it’s own, on top of greens, or my personal preference — aggressively shoved into a nice warm pita, mmm. Plus, it’s so freaking cheap to make! Who said eating vegan was expensive? Give me names.
A Few Notes
- This salad is so good for meal prep because it gets more flavorful after letting everything sit together for a day or two! You can totally serve it fresh, but I recommend making it a day ahead.
- If you like Kalamata Olives, I would highly recommend adding some! I used to include ~⅓ cup of these, but since I moved to Spain I can no longer find them.
- Feel free to adjust the herbs & spices to your liking — this recipe is very hard to mess up.

This Chickpea Salad is loaded with Mediterranean flavors, comes together in under 10 minutes, and is perfect for meal prep.
Ingredients
- 1 (15 oz) can of Chickpeas
- 1 medium Tomato, diced
- 1 large English Cucumber, diced
- 1/2 Red Onion, diced
- Juice of 1 small Lemon (~3 tbsp)
- 1 tbsp Olive Oil
- 1 tbsp Apple Cider Vinegar
- 1/2 tbsp dried Parsley
- 1 tsp Garlic Powder
- 1 tsp Oregano
- 1/2 tsp Cinnamon
- Salt + Pepper to taste
Instructions
- Drain and rinse your Chickpeas very well. Put them into a large mixing bowl, along with the diced cucumber, tomato, and red onion. Give it a mix.
- Stir in the remaining ingredients.
- Put the salad in the fridge for at least an hour to let the flavors settle — the longer the better! I recommend overnight.
- Serve as desired.
