Vegan Pecan Pie Energy Bites
This year, I knew I wanted to make some sort of pecan pie recipe for the blog! I had a wonderful idea for pecan pie brownies, but when I recipe tested them they turned out a bit weird. Turns out pecan pie filling on top of a brownie was not the best thing in the world, in my opinion.
But to use up the massive amounts of pecans I purchased, I decided to make these pecan pie energy bites! They have that lovely pecan pie flavor, rolled up into a little bliss ball. Plus, they require only 5 ingredients and just 10 minutes to make. I know everyone is getting in to the baking mood lately, but you don’t even have to turn on your oven for these energy balls because they are no-bake.
Energy balls are truly the perfect quick and easy dessert or snack, and these are no exception! I hope you love these pecan pie energy bites as much as I do.
Ingredients for Pecan Pie Energy Bites
- Pecans: whole pieces or halves, it doesn’t matter.
- Dates: medjool dates work best, but other varieties like deglet noor dates also work! If your dates aren’t gooey and soft, soak them in warm water for 5-10 minutes before making the recipe.
- Oats: gluten-free, if necessary.
- Maple syrup: or any liquid sweetener of choice.
- Cinnamon
- Salt
How to make Pecan Pie Energy Bites
First, remove the pits from your dates. If your dates feel dry, soak them in warm water for 5-10 minutes until they are nice and soft. If you have soft gooey dates, soaking is not necessary.
Place all your ingredients into a food processor. Pulse several times, scraping down the sides as needed, until a sticky dough forms. The dough will have some chunks in it, because energy balls with a little bit of texture are the best!
Make sure you’ve processed the dough enough so that it sticks together when you roll it in your hands. If the dough seems dry, that means your dates weren’t soft enough. You can add half a tablespoon of water at a time, and pulse again until you achieve a sticky dough.
Form the dough into 1 – 1.5 in balls. You should have roughly 18 balls in total.
For best results, put the energy balls into the freezer for at least 30 minutes before enjoying. They will get super fudgy once they are cold!
How to store these energy balls
These energy bites taste best stored in the freezer! They get super fudgy and have a great bite to them. But if you have sensitive teeth or want a softer energy ball, you can certainly store them in the fridge.

- 1 cup soft pitted dates, packed *
- 1 tablespoon maple syrup
- 1/2 teaspoon cinnamon
- 1/8 teaspoon salt
Instructions
